Traditional French bean stews often take three days to prepare, requiring endless skimming and duck confit, but this streamlined version delivers all that soul-warming depth in just one afternoon. By combining marbled pork shoulder, smoky sausage, and crispy bacon with creamy white beans, you create a rich, meaty broth that tastes like it has been simmering for days. Topped with a garlicky, butter-toasted breadcrumb crust that shatters beneath your spoon, this hearty bake is the ultimate centerpiece for a blustery winter evening with family and friends.
Although using canned beans saves hours of soaking and boiling, you need to treat them gently so they do not turn into mush during the long bake. Stir the rinsed beans into the pot gently right before it goes into the oven rather than simmering them vigorously on the stovetop; as they bake undisturbed in the gentle oven heat, their skins stay intact while their interiors absorb the smoky pork drippings and white wine broth. Also, resist the urge to trim the fat off the pork shoulder cubes, as that intramuscular marbling melts down to baste the lean beans.
You can easily customize the sausage in this bake based on what your local butcher carries; garlic-heavy Toulouse sausage is classic, while chorizo or andouille will add a fiery kick. Because the dish is so rich and filling on its own, pair it with something crisp and acidic, such as a simple green salad dressed in a sharp red wine vinaigrette or roasted broccolini with lemon peel. Leftovers freeze beautifully for up to two months; just add a fresh layer of buttered breadcrumbs when you reheat it in the oven.

Instructions
- Step 1: Preheat your oven to 325 degrees F. Season the pork shoulder chunks generously with salt, black pepper, and smoked paprika.
- Step 2: In a large Dutch oven over medium heat, cook the diced bacon for 5 minutes until crisp. Transfer the bacon to a large bowl using a slotted spoon. Add the sliced smoked sausage to the pot and sear for 3 minutes until browned, then transfer to the bowl with the bacon.
- Step 3: Increase heat to medium-high and sear the seasoned pork shoulder in two batches for 6 to 8 minutes per batch until deeply browned on all sides. Transfer the pork to the bowl with the sausage and bacon.
- Step 4: Add the onion, carrots, and celery to the rendered fat in the pot and cook over medium heat for 7 minutes until tender. Add four cloves of minced garlic and the tomato paste, stirring constantly for 2 minutes.
- Step 5: Pour in the white wine to deglaze the pot, scraping the bottom clean. Stir in the chicken stock, thyme sprigs, reserved meats, and drained cannellini beans. Bring to a simmer.
- Step 6: Cover the Dutch oven with its lid and bake in the oven for 1.5 hours until the pork shoulder is fork-tender and the liquid has thickened into a rich gravy. Remove the thyme stems.
- Step 7: In a small bowl, toss the panko breadcrumbs with the melted butter, remaining clove of minced garlic, chopped parsley, and a pinch of salt.
- Step 8: Remove the lid from the Dutch oven, increase the oven temperature to 400 degrees F, and scatter the herbed breadcrumbs evenly over the top of the beans and pork. Bake uncovered for 15 to 20 minutes until the crust is golden brown and bubbling around the edges.
