  • 1 medium spaghetti squash
  • 2 tbsp olive oil, divided
  • Salt and freshly cracked black pepper
  • 1/2 cup yellow onion, diced
  • 3 cloves garlic, minced
  • 1 (14 oz) can crushed tomatoes
  • 2 chipotle peppers in adobo sauce, finely chopped
  • 1 tsp smoked paprika
  • 1 1/2 lbs large shrimp, peeled and deveined

Instructions

  1. Step 1: Preheat the oven to 400°F. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Brush the flesh with 1 tbsp olive oil, season with salt and pepper, and bake facedown on a baking sheet for 40 minutes until tender.
  2. Step 2: Use a fork to scrape the squash flesh into long strands. Set aside and keep warm.
  3. Step 3: While the squash bakes, heat the remaining 1 tbsp olive oil in a large skillet over medium heat. Sauté the diced onion and garlic for 3-4 minutes until softened and fragrant.
  4. Step 4: Stir in the crushed tomatoes, chopped chipotle peppers, smoked paprika, salt, and pepper. Lower the heat and simmer the sauce for 10 minutes to allow the flavors to deepen.
  5. Step 5: Add the shrimp to the simmering sauce in an even layer. Cook for 3 to 4 minutes, turning once, until the shrimp turn pink and opaque.
  6. Step 6: Plate the warm spaghetti squash strands and spoon the spicy shrimp and Diablo sauce generously over the top.
