Beef chimichurri is one of those simple dishes that feels restaurant-quality with very little effort. The rich, savory beef pairs perfectly with the bright, garlicky herb sauce, creating a balance of freshness and depth that makes every bite satisfying.
Traditionally inspired by Argentinian steakhouse flavors, this recipe works beautifully for both casual weeknight dinners and special occasions. Serve it with roasted vegetables, rice, crispy potatoes, or a fresh salad for a complete meal.
Ingredients
For the Steak
- 1 1/2 lb flank steak, skirt steak, or sirloin
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp cumin
- 2 tbsp olive oil for cooking
For the Chimichurri Sauce
- 1 cup fresh parsley, finely chopped
- 1/4 cup fresh cilantro, finely chopped (optional)
- 3 garlic cloves, minced
- 1/4 cup finely diced red onion
- 2 tbsp red wine vinegar
- 1/2 cup olive oil
- 1/2 tsp red pepper flakes
- 1/2 tsp dried oregano

Instructions
Prepare the Steak
- Step 1: Pat the steak dry with paper towels. Season both sides with kosher salt, black pepper, smoked paprika, garlic powder, and cumin.
Make the Chimichurri Sauce
- Step 2: In a bowl, combine parsley, cilantro, garlic, red onion, red wine vinegar, olive oil, red pepper flakes, oregano, and a pinch of salt and pepper. Stir well to create the chimichurri sauce and let it sit for at least 10 minutes.
Cook the Steak
- Step 3: Heat a cast iron skillet or grill pan over high heat. Add olive oil and sear the steak for 3 to 5 minutes per side depending on thickness and desired doneness.
- Step 4: Remove the steak from the heat and let it rest for 5 to 10 minutes before slicing thinly against the grain.
Serve
- Step 5: Spoon generous amounts of chimichurri sauce over the sliced beef and serve immediately.
