Ingredients

    For the Steak

    • 1 1/2 lb flank steak, skirt steak, or sirloin

    • 1 tsp black pepper

    • 1 cup fresh parsley, finely chopped
    • 1/4 cup fresh cilantro, finely chopped (optional)
    • 3 garlic cloves, minced
    • 1/4 cup finely diced red onion
    • 2 tbsp red wine vinegar
    • 1/2 cup olive oil
    • 1/2 tsp red pepper flakes
    • 1/2 tsp dried oregano
    • Additional salt and pepper to taste

    Instructions

      Prepare the Steak

      1. Step 1: Pat the steak dry with paper towels. Season both sides with kosher salt, black pepper, smoked paprika, garlic powder, and cumin.

      Make the Chimichurri Sauce

      1. Step 2: In a bowl, combine parsley, cilantro, garlic, red onion, red wine vinegar, olive oil, red pepper flakes, oregano, and a pinch of salt and pepper. Stir well to create the chimichurri sauce and let it sit for at least 10 minutes.

      Cook the Steak

      1. Step 3: Heat a cast iron skillet or grill pan over high heat. Add olive oil and sear the steak for 3 to 5 minutes per side depending on thickness and desired doneness.
      2. Step 4: Remove the steak from the heat and let it rest for 5 to 10 minutes before slicing thinly against the grain.

      Serve

      1. Step 5: Spoon generous amounts of chimichurri sauce over the sliced beef and serve immediately.
