Chicken is the workhorse of the home kitchen, and this recipe proves that familiar does not have to mean boring. This seasoned instant pot chicken breast transforms an everyday protein into something genuinely crave-worthy — the kind of meal your family will request by name and that you can confidently add to your regular rotation.

The natural pressure release is worth the wait — it allows the flavors to meld and the proteins to finish cooking gently without drying out.

This recipe scales easily for larger groups and leftovers reheat well for lunches throughout the week. Feel free to adjust the seasonings to suit your taste — cooking is always better when you make a recipe your own. Pair it with a simple side salad or your favorite grain for a complete meal.

Instructions

  1. Place the chicken into the Instant Pot. Season with Italian seasoning (if you like), sea salt, and black pepper. Pour the chicken broth around the sides of the chicken.
  2. Close the lid and select either the "Poultry" or "Manual" setting. Set the time to 8 minutes for fresh chicken breast, or 13 minutes for frozen chicken breast. (These times are for typical 8 ounce chicken breasts. If yours are larger, add a couple of minutes.)
  3. When the time is up, let the pressure naturally release for at least 5 minutes. After that, you can turn the valve to "Vent" for quick release if you're in a hurry, or continue natural release for the most tender texture.
  4. Unplug the pressure cooker and use two forks to shred the chicken. Shredding directly in the pressure cooker and mixing with the juices helps retain flavor. Drain if serving right away, or store with the broth to retain moisture.
