Tangy Yogurt Marinated Chicken🍖 Main
Chicken soaked in a yogurt marinade ensures moist, flavorful results with each preparation. The dairy coating softens the protein while contributing depth and producing a gorgeously browned crust.
By Marcus Rivera, Kitchen Tips Editor
The magic of yogurt-marinated chicken lies in its simplicity and the science behind it. Yogurt's natural acidity and enzymes work to tenderize the meat while keeping it incredibly juicy, creating a dish that's practically foolproof. The combination of bright lemon, mellow honey, and sharp mustard transforms plain chicken into something you'll want to make on repeat, whether for a weeknight dinner or weekend entertaining.
The key to perfect results is managing your heat during the searing stage. Because honey caramelizes quickly, your grill pan needs to be at true medium heat—not screaming hot. You're looking for beautiful char marks without blackening, which takes just a couple minutes per side. If you notice the marinade starting to darken too rapidly, reduce your heat immediately. The oven finish ensures the chicken cooks through gently while that gorgeous crust sets.
This recipe is wonderfully flexible for your schedule and preferences. The marinade works its magic in as little as one hour, but an overnight rest develops even deeper flavor if you're planning ahead. Consider swapping cilantro for fresh dill or parsley, or serve the sliced chicken over a grain bowl with cucumber, tomatoes, and extra yogurt sauce. The leftovers make exceptional sandwiches the next day, tucked into pita with crisp lettuce and pickled onions.

Instructions
Marinate
- Mix the olive oil, honey, mustard, lemon zest, lemon juice, garlic, yogurt, salt, and pepper in a bowl large enough to hold the chicken. Add the chicken and turn to coat. Cover and refrigerate for 1 to 8 hours.
Cook the Chicken
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Heat a grill pan over medium heat and brush the grates with oil. Add the chicken and sear until dark brown grill marks appear, about 2 to 3 minutes on each side. Watch the heat, as the honey in the marinade can burn.
- Transfer the chicken to the prepared baking sheet and spoon the remaining marinade over the top.
- Bake for 15 to 25 minutes, until a thermometer inserted into the thickest part of the chicken registers 165°F. Leave the chicken for 5 minutes until the juices settle. Slice into thick slices, scatter cilantro over the top, and serve with lemon wedges.
