This aromatic stir-fry brings together tender chicken and crisp-tender baby bok choy in a fragrant garlic-ginger sauce that's both satisfying and surprisingly light. The combination of warm spices—coriander and smoked paprika—adds depth without overwhelming the fresh flavors, making this dish perfect for those evenings when you want something nourishing but don't want to spend hours at the stove.
The secret to maximizing flavor here is grating the garlic and ginger directly into the pan rather than mincing them beforehand. This technique releases more of their essential oils and creates a more intense, evenly distributed flavor throughout the dish. Ingredients
- 2 tbsp olive oil
- 2 chicken breasts
- 3 large cloves garlic
- 2 inch piece of fresh ginger
- 2 tsp coriander
- 2 tsp smoked paprika
- 3 baby bok choy
- salt to taste
- pepper to taste
- parsley to garnish, optional
- chili flakes to garnish, optional

Instructions
- Clean the baby bok choy by rinsing the bulbs under cold running water. Then slice off the very end of the baby bok choy near the bulb. Cut the baby bok choy into quarters.
- Peel the garlic cloves and the ginger, and set aside.
- Chop the chicken breasts into bite sized pieces.
- Add oil to a large frying pan and when slightly warm, add in the chicken.
- Using a grater, grate the ginger and garlic cloves onto the chicken. Sprinkle in the coriander and smoked paprika over the chicken and sauté, stirring often, for about 7 minutes or until chicken starts to brown.
- Add in the quartered baby bok choy and turn the heat down to low. Cover the pan and let baby bok choy cook for 5-7 minutes or until slightly wilted.
- Remove from the heat, season with salt and pepper, garnish with parsley and chili flakes (optional), and enjoy warm!
