There's something deeply satisfying about transforming a humble bag of dried beans and a ham bone into a pot of soul-warming soup in just over an hour. This Instant Pot version delivers all the rich, smoky depth you'd expect from an all-day simmer, but it fits into your real life. The pressure cooker works magic on those fifteen varieties of beans, breaking down their starches to create a thick, almost creamy broth while keeping each bean intact and tender. When you add that ham bone (or hock, or leftover holiday ham), the collagen and marrow melt into the liquid, giving you a soup with genuine body and flavor that tastes like it simmered for hours.

The technique of holding back the tomatoes until after pressure cooking is crucial here, and it's worth understanding why. Tomato acid can prevent beans from softening properly under pressure, leaving you with crunchy centers even after a full cook cycle. By adding the diced tomatoes during the five-minute simmer at the end, you get their bright acidity and fruity sweetness without sacrificing bean texture. That final squeeze of lemon juice amplifies everything, cutting through the richness and making all those layered flavors pop. The sautรฉing step at the beginning also matters more than you might think. Those few minutes sweating the onions in olive oil build a flavor foundation, coaxing out their natural sugars and creating aromatic compounds that pressure cooking alone won't develop.

You can easily adapt this base recipe to your pantry and preferences. If you prefer a smokier profile, add a teaspoon of smoked paprika with the seasoning packet, or use smoked ham instead of regular. For extra vegetables, stir in a few cups of chopped kale or spinach during that final simmer alongside the tomatoes. The soup thickens considerably as it sits, so save any leftovers in the refrigerator for up to four days, thinning with a splash of broth when reheating. Serve with cornbread or crusty sourdough for soaking up that flavorful broth, and consider a drizzle of hot sauce or a dollop of sour cream for those who like extra tang.
