There's something irresistible about the combination of golden-brown pretzel crust meeting molten cheddar in a single pop-able bite. These aren't your average soft pretzels—each morsel hides a surprise pocket of cheese that stays beautifully melted while the exterior develops that signature deep mahogany color and slightly chewy texture. The sriracha works double duty here, adding warmth to the dough itself and then glazing the finished bites with an extra layer of heat that mingles with the rich butter.

The key to success lies in the boiling step, which might seem unusual but creates that authentic pretzel exterior. Don't skip it or rush through—that brief swim in baking soda water is what gives each bite its distinctive sheen and flavor. When sealing the cheese cubes inside, make sure to pinch the dough firmly so nothing leaks during baking. The high oven temperature works quickly, so watch closely during those final minutes to achieve deep browning without burning.

Consider adjusting the heat level to suit your crowd by reducing the sriracha or swapping in pepper jack cheese for an even spicier kick. These bites are perfect warm from the oven, but they also reheat beautifully in a low oven for just a few minutes. Serve them alongside a cool ranch dip or honey mustard to balance the heat, and watch them disappear within minutes.

Instructions

  1. In the bowl of a stand mixer, combine the water, yeast, brown sugar, 2 tablespoons sriracha sauce, and flour. Using a dough hook, mix on low until the flour begins to combine. Increase the speed to medium and knead until a dough ball forms.
  2. Let rise in a lightly greased bowl for 20 minutes. Meanwhile, preheat oven to 500 degrees.
  3. Line a baking sheet with parchment paper or lightly spray with nonstick cooking spray. Fill a medium-size saucepan with water and stir in baking soda. Bring to a boil.
  4. Pull off walnut-sized pieces of dough. Press a cheddar cheese cube into the center and pinch dough to seal the cheese inside, forming a ball. Repeat with remaining dough.
  5. Working in batches, put dough balls into boiling water for 1 minute. Remove and place directly onto baking sheet.
  6. Bake at 500 degrees for about 5 minutes, until dark brown.
  7. Mix together melted butter and remaining 2 tablespoons of sriracha. Brush over hot pretzel bites.
