There is a quiet confidence to a dish like creamy beef stroganoff that comes from knowing every element has a purpose. This is not just another variation on a familiar idea. It is a well balanced plate where 1 lb top sirloin steak, thinly sliced into strips, 2 tbsp olive oil come together in a way that feels both comforting and intentional, the kind of meal that makes a regular weeknight feel a little more cared for. Whether you are cooking for family, hosting friends, or simply treating yourself to something made with attention, this recipe rewards you with layers of flavor that belie how approachable it really is.
You will want to pay attention to two small details that make a big difference here. First, Pat your protein completely dry before searing and do not move it for the first few minutes. That undisturbed contact is what builds a deep golden crust, and that crust is where most of the flavor lives. Second, Keep your simmer truly gentle, with only occasional bubbles breaking the surface. A hard boil will toughen proteins and cloud your broth, while a lazy simmer keeps everything tender and clear. These are not fussy chef tricks. They are the practical habits that separate a good version of this dish from a great one, and once you do them a few times they become second nature.
Serve it as written the first time, then make it yours. Swap the herbs for what you have, add a handful of greens at the end, or turn up the heat with a pinch of chili flakes. The base technique stays the same while the flavors shift to match your pantry. If this is your first time with creamy beef stroganoff, traditional beef strips bathed in a luxurious mushroom cream sauce and nestled atop a bed of pasta. that the process is forgiving and the results are consistently satisfying. It is the kind of recipe that earns a permanent spot in your rotation, not because it is complicated, but because it is reliably delicious and adaptable to what you have on hand.

Instructions
- Place a large deep pan or dutch oven over medium-high heat. Add 2 Tbsp oil and once oil is very hot, add thinly sliced beef strips in a single layer, cooking 1 minute per side without stirring. Cook until just browned and no longer red. Sear beef in 2 batches so you don't overcrowd the pan. Remove beef to a plate and cover to keep warm.
- Add 2 Tbsp butter, chopped onion and sliced mushrooms. Sautee 6-8 minutes or until liquid has evaporated and onions and mushrooms are soft and lightly browned.
- Add 1 minced garlic clove and sautee 1 minute until fragrant. Add 1 Tbsp flour and sautee another minute stirring constantly.
- Pour in 1 cup beef broth, scraping any bits from the bottom of the pan then add 3/4 cup whipping cream and simmer another 1 to 2 minutes or until slightly thickened.
- Stir a few Tablespoons of the sauce into 1/4 cup of sour cream to temper it so the sour cream doesn't curdle then add it to the pan while stirring constantly.
- Stir in 1 Tbsp Worcestershire, 1/2 tsp dijon mustard, and season with 1/2 tsp salt and 1/4 tsp pepper, or season to taste and continue simmering until sauce is creamy. Add beef with any accumulated juices back to the pan and bring just to a simmer or until beef is heated through.
