When you pull a whole chicken from the slow cooker and it's so tender the meat practically falls from the bone at the gentlest touch, you know you've done something right. This recipe delivers exactly that kind of showstopping tenderness, thanks to a double dose of paprika (both sweet and smoked) that creates layers of warm, earthy flavor without any actual smoke or grill required. The spice blend penetrates deep into the meat during those long, gentle hours of cooking, while the olive oil helps seal in moisture and carry those aromatics into every bite. What you end up with is a dish that tastes like you fussed over it all day, when really the slow cooker did most of the heavy lifting while you went about your weekend.
The foil ball trick might seem quirky at first, but it serves a critical purpose in preventing the bottom of your chicken from steaming in its own juices and turning soggy. By elevating the bird just an inch or two above the liquid, you allow heat to circulate more evenly around it, which means the skin stays relatively intact instead of dissolving into a slippery mess. Those onion slices underneath aren't just aromatics, they also contribute sweetness and depth to the pan drippings that become your gravy base later. If you want to take the skin from passable to truly crispy, that optional broiler step at the end is worth the few extra minutes. Just watch it closely, as broilers can go from golden to charred in seconds. Resting the chicken for a full 10 minutes after broiling allows the juices to redistribute, so you don't lose all that precious moisture when you carve.
The cornstarch slurry method for the gravy gives you precise control over thickness, which is why the recipe suggests adding it gradually rather than all at once. If your chicken released a lot of liquid, you might need the full amount; if it ran a bit dry, thin it with store-bought broth to hit that two-cup mark before thickening. For a twist, stir in a splash of heavy cream or a tablespoon of Dijon mustard to the finished gravy for extra richness. Serve this with buttery mashed potatoes or egg noodles to soak up that smoky sauce, and save any leftover meat for sandwiches, chicken salad, or tossed with pasta the next day.

Instructions
- Combine all seasoning mix ingredients in a small bowl.
- Brush chicken with olive oil and rub seasoning into chicken.
- Roll up balls of foil and place in the bottom of the slow cooker with 2 thick slices of onion. Place chicken on foil, breast side up so it is slightly lifted off the bottom of the slow cooker.
- Cover and cook on low for 7 to 8 hours or high for 4 to 5 hours until the chicken reaches an internal temperature of 165ยฐF.
- Remove the chicken and place it in a small pan. Broil for 3 to 4 minutes to crisp the skin (optional). Rest for 10 minutes before slicing.
Gravy
- Remove foil and onion from slow cooker and turn onto high. If required, add broth to create about 2 cups of liquid.
- In a small bowl, combine 4 tablespoons cornstarch with 4 tablespoons water to create a slurry.
- Whisk about 2/3 of the cornstarch into the drippings/broth and let cook on high. Depending on the amount of liquid you may need to add more of the cornstarch slurry to reach desired consistency. Let cook at least 5 minutes before serving.
- Taste and season with salt & pepper.
